Spicy Mexican Crock Pot Recipe

1 can (15 oz)
Diced tomatoes, undrained
1 can (15 oz)
Black beans, drained and rinsed
1 cup
Corn kernels
1 lb
Chicken breasts, boneless and skinless
1/4 cup
Fresh cilantro, chopped

Directions

  1. In a crock pot, combine the diced onion, sliced bell peppers, diced jalapeno peppers, minced chipotle pepper, minced garlic, ground cumin, chili powder, paprika, dried oregano, salt, and black pepper.
  2. Add the diced tomatoes (undrained), black beans (drained and rinsed), and corn kernels to the crock pot. Stir well to combine all the ingredients.
  3. Place the chicken breasts on top of the mixture in the crock pot.
  4. Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the chicken is cooked through and tender.
  5. Using two forks, shred the cooked chicken in the crock pot.
  6. Stir in the chopped cilantro.
  7. Serve the spicy Mexican dish hot with your favorite toppings, such as shredded cheese, sour cream, or avocado.
